Hi, the pandan extract is a bit different from the paste. Extract is more diluted, it gives pandan flavour, but not so much of the colour. The only way to get around it (if you don't have pandan leaves readily available), is to use pandan extract and green food colouring as a substitution, keeping in mind that the amount of extract used should be less than the quantity of pandan paste that one recipe calls for, e.g. 1/4 to 1/2 of the amount. Hope this helps.

Hey! I was wondering if it would be possible to use pandan leaf extract rather than pandan paste?? If so, how would I incorporate that into the recipe in substitute for the pandan paste??

Thanks, Larnee :) Did you use the same recipe? I got my pandan paste from a Thai/Vietnamese grocery store in Montreal. I can't find any here in Fredericton... Try finding in the Chinatown in Calgary, hopefully they've some ;)
